Pony Dining was built on a simple idea: great food starts with fire, and the best restaurants let honest ingredients speak for themselves. Set within a heritage-listed sandstone building in The Rocks, our dining room embodies this philosophy - grounded, warm and shaped by the rhythm of the wood-fire grill.
A Room with Story & Soul
The original sandstone walls, timber textures and open layout give Pony a natural warmth. Rather than masking the building’s history, the design lets it breathe - creating a dining room that feels intimate, grounded and made for unhurried meals.
Design Philosophy
The creation of our space was guided by our architect and GAXA Projects, who delivered the build as Project Manager. GAXA specialise in overseeing hospitality venues from concept to completion and are trusted Hospitality Construction Project Managers. Their expertise helped shape a room that respects its heritage bones while supporting the needs of a modern, fire-led kitchen.
Cooking with Intention
Under Executive Chef Neil Nolan, the menu continues to champion produce-led cooking guided by technique rather than trend. The wood-fire is the heart of the kitchen, shaping everything from the flavour of our steaks to the warmth of the room. The approach is simple: respect the ingredient, cook with intention, and let the fire do its work.
